Hey loves,

This recipe is a bit unusual as it doesn’t contain eggs, grain, or any additional sweetener but I promise it’s really good!   Crispy on the outside and gooey on the inside.  Bananas are a great source of potassium and a prepackaged quick source of energy.  In combination with a nut butter it’s a great occasional snack idea, too.  Let loose and go bananas!

What you need:

4 ripe bananas, chopped

1 tsp vanilla extract

1/2 cup almond butter (or your favorite nut butter)

3 Tbs butter-room temp.

1/2 cup almond flour

3 Tbs ground chia seeds or flax seeds (this is an egg substitute-if you tolerate eggs well, use 4 eggs)

1 tsp baking soda

1 tsp baking powder (corn free varieties do exist)

1 Tbs cinnamon

pinch of sea salt

What you do:

Mix the banana, almond butter, soft butter, vanilla, and prepared seeds (see below for details on how to prepare)in a food processor.  In a separate bowl, combine flour, cinnamon, sea salt, baking soda, and powder.  Then mix the two mixtures together until well combined.  I promise I won’t tell if you lick the spoon.  😉  Oil a bread pan and pour the goods in.  Bake on 350 for 50 minutes.  Loaf will be brown and cake like on the top and the insides might be soft but will hold together after cooling.

*To prepare chia seeds, mix with 2.5 Tbs of water to every Tbs of seed (that equates to 7.5 Tbs of water).  Mix and let seeds expand.
